Casella Pioppi Olive Oil is produced from Vicki's family home in a small village in Umbria called Preggio. The family home initially had a small number of mature olive trees, but this was expanded 10 years ago when an additional 250 young trees were planted. The trees are not treated with any chemicals meaning the oil produced is completely organic. Each year (in October/November) the olives are hand picked by friends and family. who travel from across Europe to escape the city and live a farmers life for a week. Once picked, the olives are pressed within a few days to ensure freshness and flavour is retained. The pressing takes place at a local mill using traditional cold press techniques. In all the process, from tree to finished product, takes a couple of days. The oil is quality tested each year by olive oil specialists in Italy and consistently achieves the highest rating, which givs it the official status of organic extra virgin olive oil.
